Healthy(ish) Cupcakes (& Killer Frosting!)

So I found a recipe for chocolate cupcakes that uses a substitute for oil or butter. At first I was a little hesitant to try it, merely for the "gross factor" that ran through my head. But after a few days I decided to give it a try. They are FABULOUS!! Now, please don't think of me any differently when I tell you what is in them… black beans!
Some of you have already tried them - back me up on this!!! They are good! Luckily my kids love beans, but if your's don't - this is a great way to get in some protein and fiber. Just try it :)

Just a side note that confused me: keep the bean in the can when you refill with water. The first time I thought it was an extra can of water, but its not… I got this recipe from the Deals to Meals blog. She dedicated the whole month of March to bean recipes, so go check it out! White bean cookies, brownies, soups - its all there.

Now on to the frosting. This is sooooo good! Maybe it is what I like about the cupcakes… This recipe isn't from the Pioneer Woman, but she did review and said it is the best ever. And it is.


Now I am aware that is in no way healthy, but I figure since it is (supposed to be) 90% cupcake and 10% frosting you are still good to go. Justification rules! If you give them a try, let me know what you think!!!

Couponing!

Hello Ladies! I have been interested with the idea of using coupons for a while now. (I mean really, who isn't interested in the idea of saving money?!) Then I saw a show on TLC called Extreme Couponing. Have any of you seen that?!!!? It is CRAZY!
Anyway, I have realized that I have no idea where to start and was curious if anyone else was interested in learning with me? Granted, I don't want to be as hardcore as the people on that show - really, I don't know very many people who need 1,200 sticks of deodorant - but I think the premise of it is amazing.
So, let me know if you're interested! Maybe we could start a nerdy little coupon group or something :)

Glitter Toes

With everyone moving in and out of the neighborhood, Charlotte Kowalk wants to host another ladies night. Originally we had planned to watch the final episode of The Bachelor, but we changed our minds since Tuesday night seems to work better for everyone than Monday night.
Our new plan is Glitter Toes.
I think it's the perfect way to welcome Spring and warmer weather.

She has all the stuff so all you need to bring is yourself. I'm sure she won't be opposed to treats if we could all bring a little something to share...just a thought.

Another Food Co-op

I found this food co-op from ksl.com, who did a story on it. I know some of you do Bountiful Baskets. This one seemed appealing to me, because you can buy meat, and you can also choose your fruits and veggies, instead of just getting what they give you.

Thought I would share.

I placed an order for the March 19 pick up over at Taylorsville SLCC campus.
